The machine is constructed from food-grade 304 stainless steel; the body is robust and durable, complying with food processing hygiene standards. It features a standard dough sheet width of 320mm (customizable) and a standard rolling thickness range of 1–15mm; when paired with a dough folding unit, it can produce ultra-thin sheets as thin as 0.4mm.
The equipment utilizes a three-stage progressive rolling process:
Stage 1 involves repeated rolling of dough granules. With manual assistance for 1–3 folding and pressing cycles, the granules are compressed into a sheet of uniform thickness. This process expels internal air and initiates the alignment and stretching of gluten proteins, establishing the fundamental gluten structure.
Stage 2 focuses on dough sheet rolling. The formed thick sheet undergoes continuous rolling and gradual thinning, further stretching and extending the gluten network to enhance the sheet's extensibility and overall uniformity.
Stage 3 involves rolling and coiling. This final stage densifies and homogenizes the gluten structure, eliminates internal stress within the dough sheet, and optimizes overall gluten strength. These three progressive stages effectively reinforce the gluten network and improve the dough's toughness.
Each motor is equipped with an independent variable-frequency drive (VFD), allowing for adjustable speeds and rolling ratios. The machine operates smoothly and adapts to diverse production requirements.
